The Hawaii Tea Society presents:
“Temomi Hand Processing Green Tea Workshop”
Saturday June 23rd, 2007 10AM – 5PM
Sunday June 24th, 2007 11AM – 6PM
UHH Campus University Classroom Building, Ho’oulu Terrace, Room 127
Featuring renown Gyokuro Temomi Tea Master Toshikazu Yamashita from Kyotanabe, Kyoto Prefecture. Gyokuro is a highly prized Japanese green tea involving hand processing in a traditionally based technique called Temomi. Gyokuro tea has two qualities that make it very special. First, proper soil is fed to develop an exact quality of nutrition and moisture and second, all leaves are hand picked and hand processed. These two exceptional aspects are impossible to maintain at large-scale tea gardens. The art form of manual tea processing is becoming rare as machine production replaces this unique expert craftsmanship sought after by connoisseurs of Japanese green tea.
Tea Master Toshikazu Yamashita and his assistants arriving direct from Japan will lead the two day workshop as part of the on going research and education program conducted by the Hawaii Tea Society for Hawaii’s tea industry and enthusiasts of traditionally based art forms.
Mr. Yamashita was born into a tea farming family and has won some of most prestigious awards for his excellence in achievement, including the highest national award from Japan’s Minister of Agriculture, “Contemporary Master Craftsman” from Minister of Health and Welfare and received Japan’s Emperor honor “Order of Sacred Treasures”. He is actively involved in educating the young generation of Kyoto tea producers and is currently a central member of the regional Temomi Preservation Club, and president of his own Temomi School, Ikuseijuku.
The workshop will be a hands-on class for Temomi processing, a talk on the construction of table building for hand processing green tea and a curriculum including the history, science and art of gyokuro and sen cha tea with tastings conducted by local growers of Hawaii to help guide students in understanding the different facets of fine green teas.
